I have to confess that I am in love with this recipe from Against All Grain. I finally got around to making them because of Lent, but these will be a favorite all year long. The recipe might seem a bit daunting because there are so many components to make, but it’s truly a simple meal. I baked the fish while flipping the tortillas, and I made the avocado cream earlier in the day. Because of the lime juice, it can be refrigerated without turning brown right away and it is truly the secret ingredient. If you make these you must enjoy the avocado cream with the fish. The flavor combination is out of this world!
